I checked out the websites listed & thought they were great. As far as preparing meals AND not spending 2 hours in the kitchen: -make soups, stews, cassaroles on weekend & freeze in individual servings. Freeze in freezer bags or small microwavable containers.

This doesn't mirror my experience. About 6 months ago I moved from eating out almost every meal to preparing everything at home. I avoid all convenience foods and make everythign from scratch. I enjoy my food much more and unfortunately can't say I eat less or lose my appetite by the time I sit down to eat. I eat as much as I ever do but at least I have control over the ingredients and am not consuming hidden salt, sugar and trans fatty acids. The downside is I seem to spend all my time in the kitchen. It's a real time killer. If you have a way to both prepare meals at home AND not spend 2 hours a day in the kitchen, please share. You'll be my hero.

I think this concept is right on. Staying away from food is not a sustainable solution to changing your eating habits. Becoming more involved with food can help. The more time you spend preparing your food, learning about food and nutrition, and planning, the more power you will have over your diet.
