Eggs Over Easy

Eggs are part of the quintessential breakfast, often with toast or some crisp fried bacon. Eggs are quite nutritious too. It’s got a chockfull of goodies like vitamins (A, B, D and E), minerals (iodine, zinc, calcium…)and protein. Yeah, it’s got some fat but just make sure you don’t down a whole carton of eggs in one breakfast. There are several ways of cooking eggs, but going by a traditional breakfast, I’m featuring how to cook eggs over easy.

Ingredients:

2 eggs
1 tablespoon of butter
salt and pepper to taste

What to do:

  • It’s better to use a non-stick skillet for eggs.
  • Place it over low heat and add a pat of butter. Wait, a non-stick skillet and butter? Well, the butter’s mostly for flavor.
  • Remember, eggs burn quite easily so lay-off the heat.
  • When the butter stops frothing, crack the eggs directly into the skillet.
  • Tilt the skillet over to the far side to let the eggs pool.
  • It usually takes about 30 seconds for the whites to set.
  • Jerk the skillet once in a while to prevent the eggs from sticking.
  • Season the eggs with a bit of salt and pepper
  • Flip the eggs over -> push slightly forward, snap your wrist upwards, and catching the eggs by meeting it all in one fluid motion. The idea is to keep the yolks from breaking (Do that and pat yourself on the back after).
  • Take another 10 seconds before flipping the eggs back
  • Slide on a plate and serve with toasts or bacon
