If you’re a fan of freshly squeezed orange juice then you probably have a lot of orange peels to throw away. But why throw them away? Sure you’ve seen orange zest in marmalades but how about making candies out of them. Yup, you sure can and here’s how.
What you need:
- Peels from 3 large oranges (or grapefruits!)
- 3/4 cup water
- 2 tbps corn syrup
- 2 3/4 cups sugar
- A 3-quart saucepan
- A rack
What to do:
- Slice peels into 1/4-inch wide strips
- Place them in the saucepan
- Add some water and bring to a boil
- Bring the heat down to let it simmer for 15 minutes
- Drain
- Boil the water, syrup, and 2 cups of the sugar
- Stir until the sugar dissolves
- Add the peels
- Simmer for 40 minutes
- Drain and dry the peels by placing them on a rack
- Toss the peels with the rest of the sugar
- Allow to air dry for 3-hours
