Ham and Lentil

We’re back with some of these easy to make recipes for those lonely weekday nights when you just don’t have enough time to make a full course meal. So here’s a quick recipe for some good ol’ ham and lentil soup. It’s quite quick and easy to do. Quite a hearty meal too.

What you need:

  • 6 slices of bacon, chopped
  • 1 medium onion, sliced
  • 1 canned tomatoes, chopped
  • 1/2 cup tomato paste
  • 1/4 cup chopped parsley
  • 6 cups chicken broth
  • 1/2 cup thyme
  • 1 cup lentils
  • 2 1/2 cups smoked ham, diced
  • 1 can (8 oz.) mushrooms, sliced
  • salt and pepper to taste

What to do:

  • Fry the bacon until crisp.
  • Add and saute onions until tender. The bit of fat from the bacon will blend nicely with the onions.
  • Add the rest of the ingredients. Stir well to integrate every thing.
  • Cover and simmer until lentils are tender. Don’t overcook though. Lentils tend to become mushy when overcooked.
  • The recipe serves five but can be doubled for a family treat.
