
We’re back with some of these easy to make recipes for those lonely weekday nights when you just don’t have enough time to make a full course meal. So here’s a quick recipe for some good ol’ ham and lentil soup. It’s quite quick and easy to do. Quite a hearty meal too.
What you need:
- 6 slices of bacon, chopped
- 1 medium onion, sliced
- 1 canned tomatoes, chopped
- 1/2 cup tomato paste
- 1/4 cup chopped parsley
- 6 cups chicken broth
- 1/2 cup thyme
- 1 cup lentils
- 2 1/2 cups smoked ham, diced
- 1 can (8 oz.) mushrooms, sliced
- salt and pepper to taste
What to do:
- Fry the bacon until crisp.
- Add and saute onions until tender. The bit of fat from the bacon will blend nicely with the onions.
- Add the rest of the ingredients. Stir well to integrate every thing.
- Cover and simmer until lentils are tender. Don’t overcook though. Lentils tend to become mushy when overcooked.
- The recipe serves five but can be doubled for a family treat.
