
This would probably only get to those who’ve watched Forrest Gump. Remember Bubba with all his shrimp recipes? Well, I don’t really know if he mentioned this or not but it’s a shrimp recipe - spicy coconut shrimp.
What you need
- 1 ½ pounds unpeeled fresh shrimp
- 1 tbsp minced garlic
- 1 tbsp chopped scallions
- ½ tbsp minced ginger
- 1 cup coconut milk
- 3-10 pieces chopped green pepperoni (according to desired hotness)
- 2 tbsp oil
- salt and pepper to taste
What to do
- Sautee garlic, scallions, ginger, and pepper in oil.
- Cook until peppers are soft. Add shrimp.
- Cook until shrimps turn red/orange.
- Add coconut milk.
- Simmer until liquid is reduced to 1/4 of a cup.
- Serve over hot steamed rice.
