Tea is a healthy drink. And it can be a social drink too, best for afternoon get-togethers. For a quick way to prepare for a large gathering you can prepare tea concentrate. Here’s how to make concentrate good for 40 to 50 cups.
- Rapid boil 1 1/2 quarts cold water.
- Remove the water from heat and immediately add 1/4 pound loose tea.
- Stir to immerse the leaves.
- Cover.
- Let stand for 5 minutes. Strain into a teapot until ready to use.
- Pour two tablespoons of tea concentrate into a cup and fill with hot water for a hot tea fix.
- Pour 3 tablespoons of tea concentrate for iced tea to allow for the ice melting.
Double the recipe for a larger crowd.

I’ve been wondering about this, because I drink constant amounts of tea.
I make a coffee concentrate (cold water extraction) which is even more convenient than instant coffee, and keeps well in the fridge for 2 weeks.
But I drink more tea (mostly herbal) than coffee – and this process will obviate the need for keeping a huge pot of herbal tea sitting on my counter every day.
