Tea is a healthy drink. And it can be a social drink too, best for afternoon get-togethers. For a quick way to prepare for a large gathering you can prepare tea concentrate. Here’s how to make concentrate good for 40 to 50 cups.

  • Rapid boil 1 1/2 quarts cold water.
  • Remove the water from heat and immediately add 1/4 pound loose tea.
  • Stir to immerse the leaves.
  • Cover.
  • Let stand for 5 minutes. Strain into a teapot until ready to use.
  • Pour two tablespoons of tea concentrate into a cup and fill with hot water for a hot tea fix.
  • Pour 3 tablespoons of tea concentrate for iced tea to allow for the ice melting.

Double the recipe for a larger crowd.
