
Clarified butter is just butter that contains only pure fat. It has a very delicate flavor and is often required when baking fine cakes. It’s also best for sauteing since it doesn’t burn as quickly as regular butter. It’s great for dips for steamed seafood. Here’s how you can clarify butter.
What you need:
- 1 stick of unsalted butter
- Heavy pan
What to do:
- Cut the stick of butter into small pieces.
- Melt the pieces in the pan over low heat.
- Tilt the pan to one side and skim off the foam that forms on the top of the melted butter.
- The clear liquid that stays is what’s clarified butter.
- It’s a bit costly though as a stick usually just yields about 6 tablespoons of this stuff but is sure can be worth it.
